Chicken Run (2000)

Chicken Scalopini

Chicken breasts about 2-3 cut into bite size pieces
1 onion
salt and pepper
good white wine
tomato sauce
chicken broth

Coat chicken with flour and fly in pan w/ olive oil and pat of butter until brown. Add chopped onion and parsley, salt and pepper. Cover pan and let simmer for a minute or two. Add some of the white wine and let simmer a few minutes so the wine can reduce. Add chicken broth, add tomato sauce. Simmer all for 30 minutes at low temp.

Serve over mashed potatoes.
